- Mixed Dried Fruits & Nuts: ¾ cup including almonds, pistachios, raisins, and cherries, for a crunchy, fruity contrast.
- Orange Food Coloring: A pinch optional, for an extra vibrant touch.
- Rose Water: 1 tablespoon for a fragrant floral note.
- Milk: ½ cup infused with saffron, to enhance the color and richness.
Instructions
- Prep the Rice: Begin by washing 2 cups of basmati rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.
- Boil the Rice: In a large pot, bring 4 cups of water to a boil. Add the washed rice along with a pinch of saffron strands. Boil until the rice is 70% cooked, about 7-8 minutes, then drain and set aside.
- Prepare the Saffron Milk: Warm ½ cup of milk and dissolve a pinch of saffron strands in it. This will be used to infuse the rice with a beautiful color and aroma.
- Toast the Nuts and Spices: In a frying pan, melt ½ cup of clarified butter (ghee) and sauté 5-6 crushed cardamom pods along with the mixed nuts and dried fruits for about 2-3 minutes, until fragrant and golden.
- Cook the Rice with Sugar Syrup: In the same pan, add 1 cup of sugar and the saffron milk to the nuts and spices. Stir until the sugar is dissolved. Add the partially cooked rice and gently fold it into the syrup, ensuring even coating. If desired, add a pinch of orange food coloring for extra vibrancy.
- Simmer: Cover the pan with a tight lid and simmer on a low flame for 15-20 minutes, allowing the rice to absorb all the flavors and complete cooking.
- Garnish and Serve: Once done, let the Zarda sit covered for about 5 minutes. Then, fluff it up with a fork, garnish with some more nuts and dried fruits, and sprinkle rose water for an added fragrance.
- Enjoy: Serve your Zarda warm or at room temperature, and enjoy the burst of flavors and colors.

When preparing Zarda, soak your basmati rice in water for at least 30 minutes before boiling. But here's the twist—add a teaspoon of lemon juice to the soaking water.
