Crunchy & Juicy Jalebi Recipe

Ingredients
- All-purpose flour Maida - 1 cup
- Yogurt plain - 2 tablespoons
- Sugar - 2 cups for syrup
- Water - 1 cup for syrup + ½ cup (for batter)
- Saffron threads or food coloring - a pinch for color
- Lemon juice - 1 teaspoon for syrup
- Baking powder - ½ teaspoon
- Rose water - 1 tablespoon optional, for syrup
- Ghee or oil - for deep frying.
Instructions
- Prepare the Batter: Mix all-purpose flour, yogurt, and ½ cup water. Add baking powder. Let it ferment for 4-5 hours.
- Make Sugar Syrup: Boil 2 cups of sugar with 1 cup water. Add lemon juice and saffron or food coloring. Simmer until syrupy.
- Heat the Oil: Heat ghee or oil in a heavy-bottomed pan.
- Shape Jalebis: Fill the batter in a Jalebi cloth or squeeze bottle. Squeeze out in hot oil to form spirals.
- Fry the Jalebis: Fry until golden and crispy.
- Soak in Syrup: Immediately dip fried Jalebis in warm sugar syrup for a few seconds.
- Serve Hot: Enjoy your Jalebis hot and crisp, optionally garnished with rose water.
Notes
When preparing the batter, allow it to rest for at least 30 minutes before frying. This helps the flavors meld and the batter achieve the ideal consistency, resulting in even crisper and more flavorful Jalebi. Additionally, you can enhance the taste by adding a pinch of cardamom powder or saffron strands to the batter for a delightful aromatic twist.
